Fish like tuna, kingfish mostly served as sashimi, freshness is the key. Tuna processors spend much money on freezing and transport the fish. Our client in Australia used to export the kingfish in chilled, which cost a lot of money on the air freight. Now by using liquid nitrogen freezing, you can have the frozen fish as fresh as chilled ones.
In march, we installed a 1000kg cabinet freezer in Adelaide, Australia. The cabinet freezer has 4 trolleys, suitable for whole fish and fish fillet processing.
-90C freezing temperature, the whole fish average 6 kg each, can be frozen to -40 C core temperature in 50 minutes. The frozen fish looks very beautiful and no damage to the texture.

Liquid nitrogen temperatures is -196 °C, it is the most ideal refrigeration medium in the world. When the ultra low temperature nitrogen gas in contact with food, it will take the heat of the food away in only few minutes, quick freezing maximally preserves the moisture and keep the original taste, looks and cells structure of the food. The ice crystal inside is very tiny and even, and will not break the cells after defrost. The weight loss after processing is only 0.5%. Nitrogen gas is colorless, odorless, nontoxic, nonflammable, much safer than Freon and Ammonia, especially it is environment friendly.
2. Food quality. The typical mechanical freezer can reach -38C, cost hours to freeze the food. liquid nitrogen freezer can reach -190C, freezing time is only few minutes. Quick freezing does no damage to the cells, and preserve the flavor and looks.
3. Operation cost. mechanical freezers use a lot of electrcity and requires more labour force. Liquid nitrogen freezer saves power consumption, the main cost is liquid nitrogen. It depends on the bulk price you get from the gas company. In general, teh operation cost is about the same.
